This is a good setting but it doesn't describe the story conflicts.
Is the new person happy about the job?
Does he have to die?
Does the GR want to retire?
All that can and must be in the story. Not your story, but here is an example
"The Grim Reaper must convince a father to leaves his family and become the reaper's replacement"
If you get stuck, I suggest looking into Terry Pratchett's Reaper Man as?another approach.
Or the Grim Reaper and St. Peter could switch jobs.
(And why not play it for comedy instead of drama?)
This feels like a common concept so it needs some sort of twist.
Like the only eligible person is a professional skeptic.

Who is the protagonist -- the Grim Guy or an unnamed entity who must find a replacement?? What's the inciting incident - - what sets up the need to replace him now?? What's at stake if no replacement is found?
As written, there's raw material for a skeleton of a sketch, but it needs to be fleshed out.
